Healthy, quick and delicious Vegetable Fried Rice. 
Ingredients:
Drizzle of olive oil1 or 2 cloves of garlic1 whole shallot5 Minute Brown rice - 4 servingsEgg beaters - 3/4 cupMixed vegetables of choice (frozen and thawed) - 2 cupsRaw cashews - 1/2 cupPineapple chunks (in own juice drained) - 1/3 cupTeriyaki sauce or another sauce of your choosing for flavor - 1/4 cupDash of Salt Dash of Red Pepper
Start by sauteing the olive oil, chopped garlic and shallots in a wok over medium heat. Add in the cooked brown rice and thawed and drained vegetables. Push aside (to the best of your ability) the rice and vegetables and pour egg beaters as flush to the pan as possible. Slowly break up the eggs and mix into the rice/vegetable mixture. Keep stirring until egg beaters are fully cooked. Add drained pineapple chunks and raw cashews. Slowly pour in Teriyaki sauce (or whichever sauce of your choosing). Salt and pepper to taste. Continue sauteing the fried rice over medium heat for another five to ten minutes. And serve.
The entire meal takes around 20 minutes and serves 3 to 4 people easily. It’s seriously delicious, and if you’re a glutton like myself and decided to not share with anyone - you will have leftovers for lunch or dinner the next day. ;)
